This product is a block of approximately 2.5 kg of Gruyère Doux AOP KING, from the EMMI brand. It is a Swiss pressed cooked cheese, made from raw cow's milk (Swiss origin). Gruyère AOP is renowned for its high quality, guaranteed by the Protected Designation of Origin label. This type of "mild" Gruyère has an ivory-coloured paste that is moderately firm and not very crumbly. It has a strong flavour, typical of Gruyère, with a more or less salty note and varying fruity tastes. It is vacuum-packed for optimal preservation. Professional culinary uses: Gruyère is a fundamental and versatile ingredient, particularly in French and international cuisine: ► Grated and gratinated: Essential for making gratins (potatoes, vegetables), onion soups au gratin and dishes requiring excellent melting properties and a pronounced flavour. ► Ready meals: Essential for preparing fondue savoyarde (mixed with other cheeses), croque-monsieur or high-quality hot sandwiches. ► Cutting and plating: The block format (±2.5 kg) is ideal for cutting and presenting in slices or cubes on cheese platters and buffets.

Gruyère is made in the Swiss Prealps in the canton of Fribourg: Gruyère. This mid-mountain region with a cool and humid climate offers rich pastures which influence the quality of the cheeses. Aged in a natural cave for a minimum of 12 months, this Gruyère has a more rustic and deep taste. Its recognizable rind is brown and thicker. Its paste reveals small crystals that sign cheeses aged for a long time. Its flavors assert themselves with intensity: notes of nuts, wood, leather. Gruyère de Grotte is excellent value for money for a raw milk cheese, matured for more than a year.
